The Scoop:
Here in the girls kitchen we love throwing together a quick dip to snack on between shifts, after a hot work day, or to add on top of a burrito bowl. The team favorite is what we call our Cowgirl Salsa, our take on the classic Texas Caviar or Cowboy Salsa. It’s fresh, spicy-sweet, totally snackable, and good for you. You’ll want to pile it on everything, but it’s best served straight up with our Girls Chips.
Ingredients:
- 1.5 cups cooked black beans or 1 can seasoned black beans (drained & rinsed)
- 1.5 cups grilled corn (off the cob or cooked from frozen)
- 1.5 cup pico de gallo (or diced tomatoes, onions, jalapeño, cilantro, lime)
- 1 can diced mango (drained) or 1.5 cups fresh diced mango (very ripe)
- Lime juice
- Salt & pepper
- Optional: diced habanero for extra heat
- Serve w/ Girls Chips
Instructions
- Heat & Flavor:
Drain and rinse the black beans. Pan-fry them with the corn, 1/2 tbsp oil (optional), and your favorite seasoning or chili powder until aromatic and flavors are blended. Let cool. - Toss & Chill:
In a medium bowl, gently combine the black beans, corn, pico, mango, and lime juice. Salt and pepper to taste. Optional adds: habanero if you like it spicy, ground chipotle if you like it smoky, orange juice for extra sweetness. Scaling up this recipe is easy – just use equal parts of each ingredient; salt and lime juice to taste. - Let It Mingle:
Let the salsa sit for 10–20 minutes to let the flavors soak in. Refrigerate if not serving immediately. - Serve It Up:
Spoon generously into a bowl and surround with Girls Chips. Garnish with cilantro. Store extra salsa in an air-tight container in the refrigerator for a healthy snack and easy topping for your guacamole, burritos, nachos, Mexican pizza, and more.
